El Cherro

A Caribbean carnival in a glass.

Ingredients

  • 25ml light rum
  • 25ml dark rum
  • 15ml Orange CuraƧao
  • 15ml Galliano Liqueur
  • 40ml Pineapple juice
  • dash grenadine
  • superfine (castor) sugar
  • wedge of lemon

Method

Combine all the ingredients except the Grenadine in a shake filled with ice and shake. Strain into a highball filled with crushed ice. Pour the grenadine over the top. Garnish with dried pineapple slice, star anise and mint leaf.
