Fair Enough

Pretty as a picture, this lovely cocktail is a delight on the eye and the palette and was created for the menu at my new bar in Hong Kong, Salvatore at Maison Eight.

Fair Enough

Ingredients

  • 40ml light rum
  • 15ml Goji Liqueur
  • 15ml lemon juice
  • 15ml red fruit tea summer cup
  • 15ml pineapple gum
  • 10ml egg white

Method

Pour all the ingredients into a shaker filled with ice. Shake hard and long. Double strain into a chilled cocktail glass.

Garnish with dried flowers and dried fruit.
