Fizz a la Violette

A cocktail created in the late 30s, an adaptation of the Ramos Fizz, this drink has a silky feel from the rich ingredients and a delicate floral finish, it looks beautiful, tastes great and deserves a renaissance.

Ingredients

  • 30ml Old Tom Gin
  • 30ml Violette liqueur
  • 5ml fresh lemon juice
  • 5ml fresh lime juice
  • 10ml sugar syrup
  • 15ml cream
  • 40ml pasteurised egg white
  • top up with soda

Method

Pour all the ingredients into a shaker filled with ice, shake long and sharp to create a creamy consistency, open the shaker and add the soda water, close the shaker and roll it gently around to allow the soda to mix into the creamy mixture. Pour into an attractive tall glass and garnish with a fresh violette. Serve with a straw.

If you don’t have the energy for a long shake, before shaking whip the ingredients in the shaker with a hand blender and then add the ice and shake.
