INGREDIENTS – FOR THE DRINK

50ml Tequila Reposado
10ml Mezcal
20ml Dill and Rocket Sherbet
15ml Amaro Montenegro
5ml Lime Juice

FOR THE SHERBET

Half Bunch of Rocket Salad
12 Dill Leaves
350gr Caster Sugar
8 Lime Peel
200ml Lemon Juice
1 Barspoon Citric Acid
1 Barspoon Ascorbic Acid

 

METHOD – TO MAKE THE SHERBET

Cut the dill leaves and place in a bowl with the rocket, sugar and lime peel and leave for 24 hours. After one day add the rest of the ingredients and blend, fine strain, pour into a clean bottle and refrigerate.

TO MAKE THE DRINK

Pour all ingredients, along with the sherbet into a glass filled with crushed ice and garnish with cardamom leaves and lime strips.
