Queen’s Backyard

A regal fruity cocktail, the strawberry is the most prominent flavour and softens the presence of the gin, hints of rhubarb and elderflower flavours make this a perfect drink for a spring or summer event.


  • 50ml Rhubarb infused gin
  • 30ml Strawberry sherbert
  • 15ml Elderflower cordial
  • 10ml apple juice




For the Strawberry Sherbert

In a large bowl place 350 grams of castor sugar with the peel of 1 pink grapefruit and the peel of 1 lemon.

Muddle the peel with the sugar in order to extract the essential oil.

Add 350 grams of finely chopped strawberries and mix everything together.

Cover and leave for 24 hours and then fine strain.


Pour all the ingredients into a shaker filled with ice, shake and strain into a chilled coupe glass. Garnish with a strip of dehydrated rhubarb and a small flower.
