Little Tasty Italian

I have named this drink after myself! I’m told I’m tasty, and, OK, I admit it, I’m a little on the short side. Enjoy!



To make the honey syrup: Combine 2 cups/475ML honey (preferably clover honey) with 1 cup/240ML water in a small saucepan. heat the moisture over a medium heat, stirring occasionally, until the honey is dissolved. allow to cool and bottle.


To make the liquorice foam: Combine 400ML strong liquorice tea with 150ML simple syrup and 100ML egg white in a cream siphon with two NO² canisters, shake well, and refrigerate the siphon for a few hours before use.


To make the drink: Combine all the ingredients in a shaker filled with ice, shake and strain into a small chilled coupe glass. Then discharge a layer of liquorice foam on top of the drink and garnish with a twist of lemon zest.
