Three Fedoras

From my menu at The Donovan Bar at Brown’s Hotel in London’s Mayfair.

For whisky lovers, a twist on the classic Manhattan. Enjoy rich and earthy flavours from the whisky complimented by the sweet taste of the Ratafia Liqueur, bitter taste of the Guinness and a touch of saltiness from the oyster leaf.



  • 50ml 12 year old Malt Whisky
  • 25ml Evangalista Ratafia Liqueur ( Italian black cherry liqueur )
  • 2 drops Salvatore’s Bitters or Fee Brothers whisky barrel aged Bitters
  • Guinness Foam
  • dried oyster leaf garnish


Pour all the ingredients into a mixing glass with ice, stir well to chill and strain into a coupe glass.

for the Guinness Air:

  • 200ml Guinness
  • 1tsp soy lecithin

in a bowl mix the ingredients with a hand blender until it creates a foam, this is your Guinness Air.

Gently scoop up the air and place on top of the drink, garnish with a pinch of ground oyster leaf.
