Santa Rosa Pastry Cup 2018

Salvatore was honoured to be asked to join a jury of Italy’s most celebrated Pastry Chefs to judge the Santa Rosa Pastry Cup, a ¬†celebration of the traditional Sfogliatella di Santa Rosa, created in the 1600s at the Monastery of Santa Rosa.

Salvatore also created a cocktail to celebrate the Sfogliatella using Amalfi Gin, Strega liqueur and Re’al Coconut Syrup, fresh pastry creme, fresh ricotta milk and lemon marmalade from the Amalfi coast and a dash of lemon juice. watch him experimenting here¬†in the kitchens of Pasticceria Pansa Amalfi.
