METHOD – TO MAKE THE REDUCTION
Bring the Champagne the boil and add four bags of Guarana Akay Tea and leave to infuse. After five minutes, remove the tea bags, add the sugar and stir. Once cool, pour into a bottle and refrigerate.
TO MAKE THE DRINK
Pour all ingredients into a shaker with ice. Shake long and sharply to create a foam and strain into a coupe glass with a single chunk of ice.
