 INGREDIENTS – FOR THE DRINK

30ml Vanilla Vodka
15ml Lemon Juice
15ml Egg White
30ml Pea Tea
30ml Passion Fruit Syrup
15ml Champagne Brut
3 Coffee Beans Muddle

FOR THE PASSIONFRUIT SYRUP

4 Passion Fruits
100ml Passoa
100ml Simple Syrup
50ml Passion Fruit Juice 
0.5gr Citric Acid

 

METHOD – TO MAKE THE SYRUP

Cut the passion fruits and squeeze the juice into a bowl. Add the rest of the ingredients and leave it to rest for 24 hours then filter the solution with a fine strainer and store it in the fridge or freezer.

TO MAKE THE DRINK

Muddle the coffee beans in the bottom of the shaker and add the rest of the ingredients with ice. Shake and strain into a champagne flute and garnish with a half butterfly purple flower leaf on the side.
