Bold, beguiling, and always surprising, Pink Floyd first appeared on the Sixties scene. As an homage, this sparkling cocktail is every bit as popular and unexpected as their music.

 
 
 

 INGREDIENTS – FOR THE DRINK

70ml Clarifide Punch
Top up with Champagne

FOR THE CLARIFIED PUNCH

5 Passion Fruits
200ml Passion Fruit Juice
300ml Hot Water
8 Cloves
6gr Coriander Seeds
1gr Camomile
20 Juniper berries
20 Passion Fruit Berries
10 Mint Leaves
250ml Cognac
150ml Bulleit 10yrs
250ml Grand Marnier
100ml Fernet Branca
100ml Simple Syrup
50ml Lemon Juice
300ml Milk

 

METHOD – TO MAKE THE PUNCH

Cut the passion fruits and squeeze them into a bowl, add the passion fruit juice and mix well.(Solution A). Blend all the spices and add them to the hot water and allow to cool (Solution B). When the Solution B is cold, combine with solution A and mix it very well, followed by the spirits and sugar. Add the lemon juice and the milk, stir the mixture and leave to rest for one hour. Fine strain into a bottle and store it in the fridge.

TO MAKE THE DRINK

Pour the clarified punch directly into a coupe glass over a single ice cube and top up with Champagne.
