The Rolling Stones were the bad boys of the 1960s and 1970s, famed for painting the town red (or black, as it were). Order this striking cocktail when the spirit of revelry takes hold.
INGREDIENTS – FOR THE DRINK
50ml Silver Tequila infused with Rooibos Tea 60ml Clementine Juice 15ml Bergamot Juice 10ml Salvatore Liquore di Limone 10ml Agave Nectar Top up with Fennel and Star Anice Soda
FOR THE ROIBOSS TEA TEQUILA
750ml Tequila 30gr Roiboss Tea
FOR THE FENNEL AND STAR ANICE SODA
15gr Fennel Seeds 2 Star Anise 500ml Hot Water
METHOD – TO MAKE THE TEA
Mix the tea leaves with the Tequila and leave to infuse. After two hours, strain and bottle.
TO MAKE THE SODA
Make a tea with all of the ingredients and leave to cool. Pour the cooled mixture into a soda siphon, charge with two capsules and refrigerate.
TO MAKE THE DRINK
Pour all ingredients, except the soda, into a shaker with ice. Shake and strain into a champagne flute and top up with the fennel and star anise soda and stir.
