Viva la Biba! Founded by designer Barbara Hulanicki, Biba was a pioneer of Swinging Sixties style, from its shorter-than-short smocks to its wild prints. This cocktail has a heartly kick, just like Biba’s signature fashions.

 
 
 

 INGREDIENTS – FOR THE DRINK

40ml Cachaca
5ml Chinotto Quaglia Liqueur
Top up with Wild Carrot Soda

FOR THE WILD CARROT SODA

Carrots
1 Black Cardamom
3 Junipers Berries
70ml Simple Syrup

 

METHOD – TO MAKE THE CARROT SODA

Peel the carrots and put them in the centrifuge. Add the (cracked) black cardamom and the juniper berries and put it in the Rotavapor; Bath: 51, Child: 8, Vacuum: 45, Speed: 200, Time: 50 min. Add the simple syrup to the carrot water, pour into a soda siphon, charge it with one capsule and store it in the fridge.

TO MAKE THE DRINK

Shake the Cachaca and Liqueur with ice. Strain into a highball glass with ice and top up with the wild carrot soda. Garnish with a twist of wild carrot peel.
